But then April protested that I wasn't playing fair. "Well, you can't just talk about an amazing soup that even all your friends love without posting the recipe. Play fair, Wendy. ;)"
So, here it is, the healthy soup version of salt and vinegar chips!
Melina's Potato Soup
6-8 large potatoes
4 medium onions
400g diced bacon
8 cups chicken stock (or consume)
250 ml yoghurt (or cream)
2 tablespoons vinegar
- Dice bacon and onion. Saute until bacon is crispy.
- Add diced potato and enough stock to cover ingredients plus a centimetre or two.
- Bring to the boil and simmer until potato is mushy.
- Whizz in a food processor (or a stick blender) until smooth.
- Return to pot. Add yoghurt/cream and vinegar.
Hint: Tastes even better the next day!
