Super Potato Soup

Last night I raved a bit about the Potato Soup we had for dinner on Facebook last night. When my 13 y.o. heard what we were having for diner he said, "That's my favourite soup of all time!"

The recipe comes from a very good friend of mine who once-upon-a-time married a potato farmer (he now farms turf, but that's another story). Mutual friends agreed loudly that it was a fantastic soup.

But then April protested that I wasn't playing fair. "Well, you can't just talk about an amazing soup that even all your friends love without posting the recipe. Play fair, Wendy. ;)"

So, here it is, the healthy soup version of salt and vinegar chips!

Melina's Potato Soup

6-8 large potatoes
4 medium onions
400g diced bacon
8 cups chicken stock (or consume)
250 ml yoghurt (or cream)
2 tablespoons vinegar

  1. Dice bacon and onion. Saute until bacon is crispy.
  2. Add diced potato and enough stock to cover ingredients plus a centimetre or two.
  3. Bring to the boil and simmer until potato is mushy.
  4. Whizz in a food processor (or a stick blender) until smooth.
  5. Return to pot. Add yoghurt/cream and vinegar.
Hint: Tastes even better the next day!
